Matsu introduces the Japanese kaiseki dining experience to Footscray with the aim of instilling memorable moments for the mouth and mind. The semi-hidden four-seat venue rewards diners with a sense of culinary discovery, unearthing an obscure gem from the Far East in Melbourne’s west.
The pine tree represents Matsu, symbolising the strong will and dedication that chef-owner Hansol Lee delivers to each dish while connecting to his heritage.
DINING AT MATSU
Kaiseki is a multi-course meal showcasing the delicacy and deceptive simplicity of Japanese cuisine. Menus* are modelled around seasonality and locality rather than trends. The true highlight is hassun, a selection of small dishes that distills the flavours and themes of the season.
Our inaugural menu presents diners both new and experienced with kaiseki to traditional techniques and staple dishes over courses.
